You already know kale is one of the healthiest foods on the planet. Here, I mix this glorious superfood with cotton candy grapes, mint, and pistachios to provide richness and depth of flavors and textures.
2 bunches of kale, stemmed and shredded
The juice of 2 lemons
1/4 cup extra virgin olive oil
Pink Himalayan salt to taste
1 cup cotton candy grapes, halved (other green varieties work too)
1/2 cup freshly chopped mint leaves
1/2 cup lightly salted pistachios
In a large bowl, combine kale, lemon juice, olive oil, and salt and massage until kale turns glossy. Toss in rest of the ingredients and garnish with additional grapes and pistachios. Serve immediately or store in fridge for up to 2 days.
