Quinoa is the mack mommy of all the grains! It is a high protein, high fiber and iron rich ancient super food. On its own, quinoa is so yummy, but here we make it ridicidonk with apple pie flair. Perfect for breakfast!
1 cup dry quinoa
2-3 firm apples, diced, skin intact
2 teaspoons best quality vanilla extract (I love the Trader Joe’s Bourbon Vanilla Extract)
1 teaspoon cinnamon
pinch each of nutmeg, cardamom and ginger
pinch of salt
1/3 cup chopped, pan toasted hazelnuts
1/3 cup freshly ground flaxseeds
Unsweetened, vanilla flavored cashew milk or some other milk
Additional diced apples
Directions: Place one cup quinoa, two cups water, apples, vanilla, spices, and salt in pot. Cook accordingly to quinoa directions, typically 12 minutes on simmer. Garnish accordingly.
