Here’s a recipe from Sue, a wonderful goddess I connected with through yoga. Lots of healthy fats, omega 3s, and fiber in these packable dessert bites. I was once asked how many calories were in these, to which I quickly responded “Who the hell cares?!” Yes, they are that good!
1/3 cup honey
1/2 cup natural peanut butter (almond and cashew also work)
1/2 cup chocolate chips
1/2 cup ground flaxseed
1 cup old fashioned oats
1 teaspoon vanilla
1 cup unsweetened coconut flakes
In a large bowl mix everything but coconut together and shape into small balls. Pour coconut in small bowl and roll balls in coconut. Chill until firm. Makes 25-30.
Less Sugar Variation (and no, its not nearly as good as Sue’s original recipe)
Follow above except reduce or eliminate honey. Replace chocolate chips with raw cacao nibs.
