I’ve been eating clean for several years now. I credit my food choices and yoga practice to finally being free of chronic pain that plagued me for a decade. This recipe helped me resolve a recent MEGA CRAVING for banana bread batter. This goes pretty deep, you see, my mom used to make banana bread often but my only interest was in the batter. I. Freaking. Loved. It. I had to sneak it because she didn’t want us getting salmonella from the raw eggs. Certainly, its forbidden nature made it that much more appealing to me.
This recipe tastes so close to the real thing, I can almost hear momma yelling at me!
1/2 ripe banana
2 heaping teaspoons plain unsweetened pea protein powder (I used Source Naturals)
1 teaspoon Xylitol (it sounds like chemical laden, but its natural, I used Vitacost brand)
A few drops vanilla flavored stevia drops (I used Sweet Leaf Sweet Drops)
Pumpkin Pie Spice to taste
Unsweetened coconut milk
Optional toppings: Crushed walnuts, chopped almonds, dark chocolate chips
Mash the banana, add the rest of the ingredients, add coconut milk until desired consistency is achieved. Taste and adjust sweetener and spice. Garnish as desired.
