Piñatas are always full of surprises and so is this smoothie. Full of all magical vitamins, phytonutrients, and fiber, its green, but amazingly sweet, tart and if you are so inclined, SPICY. Serve as a compliment to any meal or a light first course at your next fiesta.
Best of all, no one gets whacked “accidentally” with a bat. Olé!
2 big handfuls baby spinach
1 big cucumber, chopped
5-8 sprigs cilantro, chopped, stems and all
1-2 cups mango depending upon desired sweetness
juice of half a lime
Optional: jalapeno peppers, finely chopped
2 cups ice water or more, depending upon desired consistency.
Blend and serve. Makes 3 16-oz servings.
