As a kid, and a proper Irish lass, I thought celebrating my heritage with a chemical laden Shamrock Shake from McDonald’s was my duty!
Now, as a nutrition savvy mom and mindful eater, I can carry on the tradition is a healthy way. Nourish your inner leprechaun (don’t pretend you don’t have one) with this cold and sweet minty treat filled with ingredients your body needs.
1/2 frozen banana
3/4 cup baby spinach leaves
1 cup plant milk (I use coconut for me and vanilla soymilk for the kids)
2 drops natural vanilla flavoring, not extract*
2-3 drops natural peppermint flavoring, not extract*
Blend until smooth and serve this cup of cheer immediately.

*What’s with all the extract hate? No, I love extracts, its just that they have to be cooked for best flavor. Natural flavorings are made with glycerine, not alcohol, and work better in this recipe.
