As a kid, and a proper Irish lass, I thought celebrating my heritage with a chemical laden Shamrock Shake from McDonald’s was my duty!

Now, as a nutrition savvy mom and mindful eater, I can carry on the tradition is a healthy way.  Nourish your inner leprechaun (don’t pretend you don’t have one) with this cold and sweet minty treat filled with ingredients your body needs.

1/2 frozen banana

3/4 cup baby spinach leaves

1 cup plant milk (I use coconut for me and vanilla soymilk for the kids)

2 drops natural vanilla flavoring, not extract*

 2-3 drops natural peppermint flavoring, not extract*

Blend until smooth and serve this cup of cheer immediately.

*What’s with all the extract hate?  No, I love extracts, its just that they have to be cooked for best flavor.  Natural flavorings are made with glycerine, not alcohol, and work better in this recipe.  Be sure to get a natural one rather than the imitation vanilla extract, you can purchase them at health food stores or here:
