You are the sun, you are the rain, and you make my life a foolish game kaleslaw.

I love you enough to sing Lionel Richie to you.  It’s only right to share the recipe with my friends, so here goes.

Salad

1 head kale, shredded

1 carrot, shredded

1/4 head of red cabbage, shredded

1/3 cup raisins

Tahini Dressing

1/3 cup tahini

Juice of 1 lemon

1/4 cup water

2 TBS vegan mayo-I like Trader Joe’s Reduced Fat

Salt and honey (or agave nectar) to taste

Toss salad ingredients.  Mix dressing in a separate bowl and combine well.  If desired, garnish with pepitas (that’s snobby for pumpkin seeds), more raisins and additional tahini. Keeps well for 2 days.
