I get lots of questions about what I eat!  I favor simple, whole foods, and eat a plant based, vegetarian, and mostly vegan diet.  What the heck does that mean in terms of meals?  Here’s one example, a cauliflower soup that is rich, satisfying, and super healthy.  The best part is that its super easy to make (you really can’t screw it up, honest) and there are only 3 ingredients + water.   You can use this soup as a sauce, and use it in your recipes that call for that can of highly processed cream of mushroom soup.

Ingredients

1 head of cauliflower (stems too!) chopped

2 bouillon cubes (I like Rapunzel vegan)

1 cup raw cashews

Directions 

Place the cauliflower and bouillon cubes in a soup pot, add 4 cups of water, bring to a boil, then simmer until cauliflower is tender.  Add the cup of cashews and puree using a regular or immersion blender.
